Tivoli Mushrooms, Hillsdale, NY

Tivoli Mushrooms started as a passion project for Chef Devon Gilroy. He had always featured wild mushrooms on his menus in New York City and Cape Cod restaurants, and had relocated to the Hudson Valley in search of better relationship with farms. Through his search for local researching and foraging mushrooms, he discovered that other local chefs were also challenged by getting the mushrooms they wanted at peek freshness and quality – both wild and cultivated – and that there was a lack of growers in the Hudson Valley. In 2018 Gilroy started growing in a small indoor 1,000 square foot space in Hudson that was quickly outpaced by demand and grew to 5,000 square feet. In 2020, he and his partners purchased a five-acre property in Hillsdale and began to create a 15,000 square foot mushroom farm. They also took over the operations of a mushroom distributor in New York City.


As part of their financing, they received a loan through the HVADC Agribusiness Loan Fund. With the use of strategic funds from HVADC, Tivoli Mushrooms was able to add vital equipment to their new operations in Hillsdale, as well as a walk in cooler for their New York City distribution hub and a transport van.
